Why I Love These Instant Pot Garlic Mashed Potatoes
You will never turn back to the regular old boiled method for these yummy mashed potatoes. The instant pot (or your fave pressure-cooker) cook your mashed potatoes perfectly and infused with garlic flavour. They are fluffy, buttery and the perfect side dish. Set it and forget it. They steam and not boil, which helps with flavour and keeps them from being waterlogged.
Ingredients
- 2 pounds baby or Yukon Gold potatoes, peeled and cut into 2-inch pieces
- 4 clove Garlic
- 3 Butter
- 1/2 c. Milk (approx)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
How to make instant pot garlic mashed potatoes:
First, you need to prep your instant pot. If you are using another brand, like Ninja, follow your pressure-cooker’s instructions. I add 1 cup of water to the instant pot liner, and place the trivet in.
Next, it’s time to find your favourite child, or anyone who is grounded, and get the to peel the potatoes. I peeled these myself, sigh.
Chop them to an even size and place them on the trivet in the instant pot liner.
Pop your peeled garlic cloves on top. I like to position them so they won’t fall in. It’s ok if they do, but I want the garlic flavour in my potatoes and not the water that will be drained after.
Next, it’s time to cook ’em up! Set using high pressure for 8 minutes.
Once they are done, let the pressure come down naturally. This is awesome because you can be working on something else, enjoying a cup of tea or watching a movie!
Next, drain in colander and return to instant pot liner to mash.
Mashing mashed potatoes
Add in butter, milk, salt and pepper. Give it a good stir. I like mine a little bit lumpy, but you do what works for you.
Add whatever you like! Maybe some sour cream and green onion! Yuuuummmmm. Enjoy your instant pot garlic mashed potatoes!
