Beef Barbacoa Freezer Meal
This barbacoa beef freezer meal is packed with bold, smoky flavours and perfect for fancy weeknight tacos. Made with tender chunks of beef, chipotle peppers, garlic, lime juice, and spices, it’s freezer-friendly and easy to cook in the slow cooker or Instant Pot.

Beef Barbacoa Freezer Meal ingredients
3 lbs beef chuck roast, cut into chunks
3 chipotle peppers in adobo sauce (reduce for less spice)
4 cloves garlic
1 small onion, diced
2 tsp ground cumin
1 tsp oregano
½ cup beef broth
2 tbsp apple cider vinegar
Juice of 1 lime
Salt and pepper, to taste

Beef Barbacoa Freezer Meal Method
Blend chipotle peppers, garlic, cumin, oregano, beef broth, vinegar, lime juice, and onion to make a sauce.

Place beef chunks in a freezer-safe bag.

Pour sauce over, and freeze flat.

Keep in freezer for up to 12 months.
If using intstant pot, pour ingredients in bad into pressure cooker inner liner, cook on high for 60 minutes.
If using slow cooker, thaw overnight in the fridge. Cook in a slow cooker on low for 8-10 hours
Shred the beef and mix it with the sauce before serving.
