Why I Love This Coconut Honey Granola
The oven-baked granola is a super easy and delicious recipe. Add any ingredients you like! Super versatile!
Sometimes I toast up some coconut and sprinkle it in at the end or I go wild with several types of nuts.
You can use it as a healthier homemade snack idea, a healthy breakfast idea or even as a topping for some desserts.
Step 1 for that yummy Coconut Honey Granola!
Spread your oats on two cookie sheets lined with parchment paper and put them in a preheated 325 F oven. Bake for 20 minutes, stirring, and rotate your plans halfway!

Step 2
Bake your coconut for 5 minutes at 325, watch it VERY closly!

Step 3
While your oats bake and coconut, add your coconut oil to a small saucepan and melt over medium-low heat. This takes about 5 minutes. Then add in your honey.

While waiting for the butter (and watching it carefully), get your nuts ready! I used cashews and chopped them up a bit.

Prep your spices! Just put them in a little dish. I usually just use cinnamon, but you can add nutmeg or cardamom! Whatever you feel like.

Combine oats, nuts, spices and salt in a big bowl.

Give your honey and coconut oil a good stir and pour over your oats.

Step 7
Spread out onto cookie sheets again and bake in 300 F over 30-40 minutes, stirring and rotating pans halfway.

Step 8
Allow to cool 30-60 minutes, then break apart.

Step 9
Break it up with your hands and mix in coconut and dried fruit. Store in an airtight container.

Coconut Honey Granola
A mouthwateringly delicious toasted buttery maple-flavoured granola to put on everything...or eat on its own!
Ingredients
- 6 c. rolled Oats (not instant)
- 1 c. nuts, chopped
- 1/2 c. Seeds (chai, pumpkin, sunflower, etc.)
- 3/4 c. coconut oil
- 3/4 c. honey
- 1 T cinnamon
- 1/2 tsp salt
- 3/4 c. cranberries (or dried fruit)
Instructions
1. Spread your oats on two cookie sheets lined with parchment paper and put them in a preheated 325 F oven. Bake for 20 minutes, stirring, and rotate your plans halfway
2. Bake your coconut for 5 minutes and watch closely.
3. While your oats bake, melt your coconut oil. The smell will be amazing! Remove from heat and allow to cool, stir in honey.
4. Combine oats, nuts, seeds, spices and salt in a big bowl. Pour honey and oil over and stir well.
5. Spread out onto cookie sheets again and bake in 300 F over 30-40 minutes, stirring and rotating pans halfway.
6. Allow to cool 30-60 minutes, then break apart, mix in coconut and dried fruit, and store that delicious browned butter and maple granola in glass jars.
