There’s nothing quite like fresh, easy homemade pasta to elevate any dish and to be DECLIOUS. This simple recipe requires just four ingredients and can be mixed directly on the counter or in a bowl for less mess. Whether you’re making lasagna, fettuccine, or ravioli, this versatile pasta dough is the perfect starting point.

Ingredients for Easy Homemade Pasta

  • 2 cups all-purpose flour
  • 2 eggs + 2 egg yolks
  • 1/2 tsp salt
  • 1 tsp olive oil

How to Make Easy Homemade Pasta

On the Counter:

  1. Pour the flour onto a clean countertop and make a well in the center.
  2. Crack the eggs and egg yolks into the well, then add the salt and olive oil.
  3. Use a fork to gently whisk the eggs, gradually incorporating the flour from the edges of the well.

In a Bowl:

  1. Combine the flour and salt in a large mixing bowl.
  2. Create a well in the center and add the eggs, egg yolks, and olive oil.
  3. Use a fork to mix the eggs, slowly pulling in the flour until a dough starts to form.

Step 2: Knead the Dough

  1. Once the dough comes together, transfer it to a floured surface (if mixing in a bowl).
  2. Knead for 8-10 minutes until the dough is smooth, elastic, and slightly tacky to the touch.
  3. Wrap the dough in plastic wrap and let it rest for 30 minutes at room temperature. This step relaxes the gluten, making it easier to roll out.

Step 3: Roll and Shape

  1. After resting, divide the dough into 2-4 smaller pieces to make it easier to work with.
  2. Roll out the dough using a rolling pin or pasta machine, dusting with flour as needed to prevent sticking.
  3. For lasagna, cut into sheets. For other pasta shapes, use a knife or pasta cutter to cut as desired.

Cooking the Pasta

  1. Bring a large pot of salted water to a boil.
  2. Add the fresh pasta and cook for 2-3 minutes, or until tender. Homemade pasta cooks much faster than dried pasta, so keep an eye on it!
  3. Drain and use immediately in your favourite recipe.
