Cranberry Squares From Best of Bridge
These cranberry squares combine a delicious, buttery biscuit crust with a tasty cranberry filling. Almost like a Cranberry Buttertart square. These treats come to us by way of Best of Bridge, some lovely Canadian ladies who shared a love of cards and cooking.
These delicious bars came to me by surprise when I was looking through my Best of the Best of Bridge cookbook. I was about 22 and needed to bring some treats to a work Christmas party.
They were a hit and have been for the last twenty years. My mother and mother-in-law love receiving them in their Christmas goodies basket.
Cranberry Squares Ingredients
Biscuit Crust
1/2 cup cold butter
1/4 cup sugar
1 cup flour
Cranberry Filling
1 ½ cup fresh or frozen cranberries
1/4 cup packed brown sugar
2 eggs
1 cup packed brown sugar
1 tsp vanilla
1/3 cup flour
1/2 tsp baking powder
1/4 tsp salt
First, preheat your oven to 350 F and prep your pan. I take some parchment paper and crumble it up, then it’s easy to spread out and line the pan.
To start, let’s make our delicious biscuit base!
Stir your flour and sugar together.
Then it’s time to cut in the butter! I use a pastry cutter, but you use knives. Once it looks nice and crumbly, put it in your prepared pan.
Pop that sucker in the oven and bake until only very slightly golden. Use this time to make the ahhhmazing cranberry top.
Pop that first ¼ cup of brown sugar and your cranberries in a small pan. Stir over medium-low heat until cranberries start to burst. Set aside to cool a bit.
Next, I use a whisk and mix up the eggs, then I pop in the brown sugar and vanilla. Give it a good mixing. Next, stir your flour, baking powder and salt together.
Then add them to the egg and brown sugar mixture.
Finally, beat in the cranberries and stir well. Pour over the biscuit crust.
Bake in the oven 350 for about 30-40 minutes until light brown and delicious!!
Allow to cool, then cup ‘em up!

Ingredients
- Biscuit Crust
- 1/2 cup cold butter
- 1/4 cup sugar
- 1 cup flour
- Cranberry Filling
- 1 ½ cup fresh or frozen cranberries
- 1/4 cup packed brown sugar
- 2 eggs
- 1 cup packed brown sugar
- 1 tsp vanilla
- 1/3 cup flour
- 1/2 tsp baking powder
- 1/4 tsp salt
Instructions
Preheat oven to 350°F, line 8" square pan with parchment paper.
To Make Biscuit Crust
- Cut butter into sugar and flour until crumbly.
- Pat into an 8" (20 cm) square pan.
- Bake at 350°F (180°C) for 15-20 minutes, or until golden.
To Make Filling:
- In a saucepan, cook cranberries and 1/4 cup (60 mL) brown sugar over medium-low heat until berries are softened and the skins pop (about 10 minutes). Cool.
- In a large bowl, beat eggs and gradually add 1 cup (250 mL) of brown sugar. Beat until thickened. Beat in vanilla.
- Combine dry ingredients and add to the egg mixture. Stir in cooled cranberries and spread mixture over crust. Bake at 350°F (180°C) for 35-40 minutes. Don’t overbake.
