Strawberry White Chocolate Chip Cookies

These strawberry white chocolate chip cookies are a delightful twist on a classic, combining the sweet creaminess of white chocolate with the vibrant, fruity flavour of dehydrated strawberries. Dang, they are GOOD!

If you want to make your sweetheart or your kids these delicious strawberry white chocolate chip cookies for Valentines day, they will love you forever!

Ingredients

1 cup butter, softened
1 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup chopped* dehydrated strawberries
(I used this kind!)
1 cup white chocolate chips

First thing, make sure your butter and eggs are room temp! Chop up those strawberries (scissors work best). And preheat your oven!

Next, mix your dry ingredients together

Toss the dry ingredients together!

Next, we need to cream the butter with the sugar, don’t spill it on the floor like I did 🤦🏻‍♀️

So fluffy!

Throw in the egg and vanilla…and you can see why we need our egg at room temperature because it didn’t blend as well. C’est la vie.

Ok, next, mix your dry ingredients with the butter, egg mixture.

Now, we add in the fun ingredients, the white chocolate chips and strawberries.

Mix it up, and place on cookie sheets in 2-3 TBSP portions.

Bake at 325 for about 15 minutes. Check after 12.

Allow to cool on a wire rack and enjoy!

These strawberry white chocolate chip cookies are delightfully sweet and creamy. I suggest pairing them with some delicous tea (like I would EVER say no to tea 🤦🏻‍♀️). My husband would like me to make some raspberry cookies next, and I think that’s a great idea, so stay tuned!

Ingredients

  • 1 cup butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped* dehydrated strawberries
  • 1 cup white chocolate chips

Instructions

  1. Preheat your oven to 325°F (163°C) and line baking sheets with parchment paper.
  2. Cream the softened butter and sugar together in a large mixing bowl until light and fluffy.
  3. Add the eggs, one at a time, followed by the vanilla extract, and mix until well combined.
  4. Whisk the flour, baking soda, and salt together in a separate bowl. Gradually mix the dry ingredients into the wet ingredients until just combined.
  5. Fold in the chopped dehydrated strawberries and white chocolate chips.
  6. Scoop tablespoon-sized portions of dough onto the prepared baking sheets, spacing them about 2 inches apart.

  8. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

I have tried soaking the strawberries first, but think they actually are better without a soak.

Use scissors to cut the strawberries into 1 cm diameter
