Healthy Winter Salad with Mediterranean Chicken

I don’t know about you, but after the 937 cookies, 29 pounds of cheese, and 1 tonne of chocolate of the holidays, I’m ready for a healthy salad.

This healthy winter salad with Mediterranean chicken is the perfect high nutrition, high protein treat I crave!

First thing’s first, let’s gather our ingredients together:

Healthy Winter Salad with Mediterranean Chicken Ingredients

MEDITERRANEAN CHICKEN MARINADE

8 Chicken Thighs
1/4 cup fresh Lemon juice
1/4 cup olive oil
1 Tbsp Banana pepper juice (optional for tang and spice)
1 clove garlic
1 tsp Italian seasoning
1/2 tsp salt

This is truly the easiest part (in a very easy recipe), throw together your Mediterranean chicken ingredients before we make our yummy winter salad. Just throw them in a bag, mix ’em up, and put them in the fridge for 1 to 24 hours.

SALAD (Veg) INGREDIENTS

2 cups Chopped Kale
4 cups Chopped Romaine Lettuce
2 cups Chopped Cucumber
2 cups Chopped Bell Peppers (use multiple colours!)
1 cup Pomegranate Arils (OR use dried cranberries)
2 chopped apples
1/2 cup feta (optional)

When it’s time to make your salad, just start chopping things up. I often chop my salad and my kale ahead of time. I vacuum seal them in jars with a little handheld vacuum sealer. They last for WEEKS!

MEDITERRANEAN POMEGRANATE DRESSING

1/2 cup Olive Oil
1/4 cup fresh Lemon Juice
2 Tbsp Apple Cider Vinegar
1 large clove garlic crushed
1 Tbsp Honey
1/2 tsp salt
1/2 tsp pepper
1 Tbsp Pomegranate Molasses (optional, but fruity and delicious!)
1 tsp dijon mustard
1 Tsp Oregano

Anyhoo, next, let’s make our dressing, it’s easy too, just mix the ingredients together ☺️

Now, let’s make that Mediterranean chicken. Head your pan over medium-high heat, once hot, add 1 tbsp olive oil, and add chicken. Once about 80% cooked on the first side, flip and cook until finished, or about 165°F. Allow to cook for 10 minutes before cutting.

Now, let’s assemble your healthy winter salad and it’s mediterranean chicken.

I like to mix the kale and lettuce about 50/50, add the rest of the veg, and top with the delicious fruit! Pop that chicken on top and drizzle with that delicious Mediterranean pomegranate salad dressing!

  • 1/2 cup Olive Oil
  • 1/4 cup fresh Lemon Juice

Instructions

1. Mix ingredients for marinade together, add chicken. Marinate 1 hr to 24 hours.

2. Mix ingredients for dressing together, shake well. Let mellow for 1 hour.

3. When ready for salad, heat pan medium heat, until hot.

4. Add small bit of oil to pan, remove chicken from marinade and pat dry.

5. Add chicken to pan, make sure not too closely packed. If needed, do two batches.

6. Cook until chicken is about 80% done on first side (about 3 minutes), flip, and cook until 170 degrees internal temperatures. Allow chicken to cool.

7. Assemble salad using ingredients. Chop chicken, and top with dressing.
